Fun pizzas for the family

These pizzas are so easy to make and a blast for my 4 year old. It just feels special to have your very own pizza.

I use a crust recipe from here.

Recipe: PW’s Favorite Pizza

Ingredients
  • FOR THE CRUST (MAKES TWO CRUSTS):
  • 1 teaspoon Active Dry Or Instant Yeast
  • 4 cups All-purpose Flour
  • 1 teaspoon Kosher Salt
  • 1/3 cup Extra Virgin Olive Oil

Preparation Instructions

TO MAKE THE CRUST:
Sprinkle yeast over 1 1/2 cups warm (not lukewarm) water.
In a mixer, combine flour and salt. With the mixer running on low speed (with paddle attachment), drizzle in olive oil until combined with flour. Next, pour in yeast/water mixture and mix until just combined.

Coat a separate mixing bowl with a light drizzle of olive oil, and form the dough into a ball. Toss to coat dough in olive oil, then cover the bowl tightly with plastic wrap and store in the fridge until you need it. ***It's best to make the dough at least 24 hours in advance, and 3 or 4 days is even better.

It is really the best homemade crust recipe I have tried. It easy, always comes out great and I usually use only half of it and freeze the rest. Oh, and I never chill it first....I don't usually think that far ahead! But it still is so yummy!! We like our pizza with pesto so we do half and half, which Kady just thinks is so fun.

I use jar pesto because it is cheaper than making homemade. Just add toppings...we use Monterey Jack cheese, olives, sundried tomatoes and fresh tomatoes sprinkled with parmesean and Italian seasoning. And you bake for only 8-10 minutes at 500 degrees. This is the only pizza my kids will eat a lot of! (And if you know my girls you know they need to eat!) It really is an easy way to have great pizza!
